The art of creating sun dried vegetables begin in small villages preparing for the winter season. These freshly picked vegetables where laid outside the front door covered by nets to keep flies away, to dry in the hot sun. This tradition lasted for centuries but only a few years ago the rest of the world discovered how delicious these are. Now demand has grown enormously, but is still largely met by small local producer.
