Sun Dried Tomatoes

Are a natural source of Vitamin C and a good source of iron.  Vitamin C is a recognized antioxidant compound which helps protect cells.  This means lower risk of cancer, diabetes, heart and lung disease.  Therefore, sun dried tomatoes can be seen as a substitute to fresh tomatoes as same benefits are gained.  This is because the freshly selected tomatoes are handpicked, washed, cut in half, laid out under the sun on long racks and then sprinkled with salt and covered by nets.  They are left in dry for 3 or 7 days then are seasoned and placed in glass jars with oil.  Sun dried tomatoes can be eaten alone, with salads, for breakfast or for cooking.
